And sometimes, the best way to say thank you is not through big gestures, but through something simple and thoughtful made at home. A light chicken salad is one of those meals. It is fresh, comforting, and made with intention.

A Simple Chicken Salad for Mum

What you need:
– 2 chicken breasts (grilled or boiled, shredded)
– 1 tablespoon Olivia Extra Virgin Olive Oil
– 1 avocado (sliced)
– 1 cup lettuce (chopped)
– ½ cucumber (sliced)
– 1 carrot (grated)
– 1 tablespoon lemon juice
– Salt and black pepper to taste

How to make it:
1. In a bowl, combine the shredded chicken, lettuce, cucumber and carrot.
2. Add the avocado slices gently.
3. In a small bowl, mix Olivia Extra Virgin Oil, lemon juice, salt and pepper.
4. Drizzle the dressing over the salad and toss lightly.
Serve fresh and enjoy.
