Basically? It might be mid-month and you happen to have random ingredients in your pantry. Hunger pangs are striking. Avocado is one of the ingredients. Here is a recipe to turn all that into a decent meal.
It’s simple, it’s jam packed with nutrients and flavor, affordable and most importantly, it is yummy…Avocado type of yummy!
Ingredients
4 cups cooked rice (about 500gms of heated frozen rice)
1 avocado (ripe)
2 tablespoons fresh lime juice
1/2 teaspoon salt (or more to taste)
1/4 teaspoon ground cumin
1/4 cup cilantro leaves (chopped)
Instructions
- In a medium bowl, scoop out flesh of avocado and mash with lime juice, salt, and cumin.
- Stir in rice and cilantro until well mixed. Adjust salt and lime to taste. Done!
