Better Than A Box Of Chocolates

Valentine’s Day is really up there on the list when it comes to unhealthy holidays. All that chocolate while delish, is definitely going to take a toll on your waistline. This year, whether you’re celebrating with friends, family or that special someone, treat your loved ones to something equally delicious that won’t lead to a heavy stomach. These healthy recipes have you covered, plus they’re far more original than the cliché roses and chocolates.

Start the day smiling with this Valentine’s-themed version of eggs in the basket. An egg gets you started right, with six grams of filling protein. Use Olivia extra virgin olive oil and whole grain bread to boost the benefits.

It’s not a given that you’ll be together with your loved ones all day, so we’re going to do breakfast and dinner.For dinner, how about some juicy Chili-Lemon Steak with Roasted Vegetables? How good does that sound?

You can buy steak from a butcher. Don’t be scared to ask him to cut it here, trim it there, and slice it, he’ll be happy to do it. Ask for a nice cut of sirloin, lean or a bit fatty, depending on how you like it for the best results.For the roasted vegetables, you can use any root vegetables that your heart desires. I really like roasted potatoes, carrots and onions. Not only are they delicious, they also go great with the chili lime steak.

The best part about this dinner is that it comes together in under one hour, so you can spend more time with your special person.

Ingredients:

  • 1 kg sliced eye of sirloin steak
  • Olivia Extra Virgin Olive Oil or Rinsun Sunflower Oil
  • 1/2 tablespoon chili powder
  • 1/2 teaspoon salt
  • Freshly ground black pepper
  • 1 lime – you will need both, fresh lime juice and zest of 1 lime
  • For the Roasted Vegetables
  • 2 cups baby carrots, or as much as you like
  • 2 white onions, cut in half
  • 6 Large potatoes, cut the way you like them
  • 1 tablespoon Olivia Extra Virgin Olive Oil
  • Salt and freshly ground black pepper
  • Dhania for garnish

Procedure:

  1. Line a baking sheet with aluminum foil and lightly grease it with cooking spray.
  2. Place the steak on a baking sheet and brush with olive oil.
  3. In a small bowl combine the chili powder, salt, pepper, and lime zest.
  4. Rub the chili mixture on both sides of steak.
  5. Squeeze lime juice over steak and let stand 10 to 15 minutes.
  6. Cook, turning once until medium rare, about 4 to 5 minutes.

For the Roasted Vegetables:

  1. In the meantime, prepare the vegetables by tossing them in olive oil and season with salt and pepper.
  2. Place the vegetables on a baking sheet lined with aluminum foil.
  3. Bake at 250 degrees for 10 to 12 minutes, or until fork tender.
  4. Garnish steak and vegetables with fresh Dhania and serve.
