Broccoli And Mozarella Chicken

We can think of a gazillion reasons why you would opt to dine in this Valentine’s day instead of venturing out. It’s more affordable, probably more intimate, more convenient…the list is endless. But how about the good ‘ol because you can? Do it different this year, because you can.

 

There is no shortage of recipes with a high probability of landing you major points with your boo this Valentines. One of which is this delicious broccoli and mozarella stuffed chicken that makes for elegant presentation without any of the fuss.

 

Ingredients

 

  • 8 boneless chicken breasts
  • 4 tablespoons of Olivia™ olive oil.
  • 1 ranch seasoning mix
  • ½ kg fresh broccoli.
  • 1 cup parmesan cheese
  • 1 cup provolone cheese
  • 1 cup bread crumbs
  • 4 eggs.
  • 2 cans black olives.

 

Procedure:

  1. Split the chicken breast into pieces of uniform thickness and sprinkle olive oil.
  2. Add sprinkles of ranch seasoning mix and set aside.
  3. Cook broccoli in a pan until it starts to cook down.
  4. Turn off the heat and add a medium bowl of Parmesan cheese.
  5. Add half of the provolone.
  6. Beat the eggs and add them together with bread crumbs and olives.
  7. Mix well.
  8. Stuff broccoli mixture in each chicken breast, close and sprinkle the remaining cheese.
  9. Bake on 350° for 40 minutes.
