Seasons are changing, the sun is no longer shining. It’s time to cuddle up in your home after work or on the weekends with some yummy treats that will not only warm up your body but send some love to your soul. Let’s make some soft, delicious hot chocolate, love filled red velvet cupcakes.

RED VELVET CUPCAKES

What you’ll need;

  • 1¼ cups (155g) all-purpose flour
  • 1½ tablespoons (12g) Cocoa powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 3/4 cup (150g) Sugar
  • 1/2 cup (120ml) buttermilk, room temperature (you can always make your own butter milk by adding 1 tablespoon of vinegar to 1 cup of whole milk and let it sit for 5 minutes)
  • 1/2 cup (110g) Vegetable oil
  • 1/2 teaspoon White Vinegar
  • 1 Egg
  • 1/4 cup (60g) prestige margarine, room temperature
  • 1 teaspoon Red food coloring, or more if needed
  • 1 teaspoons Vanilla extract

Directions:

  • Preheat oven to 175C.
  • In a large bowl sift flour, cocoa powder, baking soda and salt. Stir and set aside.
  • In a separate large bowl, beat prestige margarine and sugar until smooth. Add the egg, beating until combined. Add oil, vinegar, vanilla extract, buttermilk and beat until combined. Gradually add the dry ingredients and mix after each addition until well combined. Add food coloring and mix.
  • Scoop the batter into the cupcake liners, about 3/4 of the way full.
  • Bake for 20 minutes, until a toothpick inserted into the center comes out clean. 6. Cool the cupcakes on a wire rack.

NOTE: It is important that all cake ingredients be in room temperature. Makes 12-14 cupcakes
HOT CHOCOLATE

This doesn’t need much from you just some love, drinking chocolate, milk , sugar (if you like yours extra sweet) and some barrister skills J, just kidding!

 

 

 

 

Once you’re done in the kitchen, serve your plate, grab your favorite blanket , go on Netflix and enjoy your favorite show as your body and soul warm up to the sweet smell of hot chocolate and red velvet goodness!
