Chocolate Oat Pancakes

The biggest highlight of Easter is that you get some extra quality time with your little ones. Why not top it off with a chocolaty breakfast? It’s a win two ways as the oats keep it healthy and the chocolate makes sure the kids have some fun.

Ingredients:

  • 2eggs
  • 1/2cup rolled oats old fashioned
  • ½ cup of milk
  • 1/2teaspoon baking powder
  • 2tablespoons raw cocoa powder
  • 1teaspoon vanilla extract
  • pinchof salt
  • 1 tablespoon of sugar (optional)

 

Instructions:

  1. In a bowl, mix as you add the ingredients in order from oats, cocoa powder, baking powder, eggs, sugar ,salt milk and vanilla.
  2. Whip until the mixture is as smooth as you want it and blended well. Allow the batter to stand for 10-20 minutes until thickened slightly.
  3. Heat a non-stick frying pan over medium heat.
  4. Fry spoonfuls of the batter until golden brown on both sides.
  5. Serve, sit back, relax and stuff your face.

 

You can top it up with whipped cream for some extra creamy fun or dress the pancakes with mint leaves, strawberries or bananas for a healthy punch.
