It’s been a while since we posted a vegetable salad recipe.
Salads are rich in vitamins and minerals. Raw vegetables are good for your health because their nutrients have not been lost while cooking. They are also great for digestive health, colon cleansing, and they help prevent constipation.
Eating a diet rich in vegetables as part of an overall healthy diet may reduce the risk for heart diseases and some types of cancers. Eating vegetables can help increase fiber intake and potassium, which helps regulate fluid balance, muscle contractions, and nerve signals.

Salad Recipe
- 4 cups finely chopped kale (ribs removed)
- ¼ cup sunflower seeds
- ¼ cup pumpkin seeds
- ½ cup dried cranberries
- 1 avocado, peeled and chopped
- ½ cup feta cheese crumbles
Vinaigrette Recipe
- 3 tablespoons apple cider vinegar
- 2 – 3 tablespoons of honey
- 3 tablespoons of Rinsun sunflower oil
Preparation
- Place kale, seeds, cranberries, feta cheese, and avocado in a large bowl.
- In a small bowl, whisk together apple cider vinegar, honey, and Rinsun Sunflower oil.
- Pour vinaigrette over salad ingredients.
- Toss gently and serve or refrigerate.
