Life is Greener & Tastier on Your Balcony

Forget about acres of farmland, sometimes all you need is a balcony, a bucket, and a little patience to enjoy fresh greens. With Mazingira Day coming up, what better way to celebrate nature than by growing it right outside your door and, of course, having a taste?

How to start your balcony shamba:

  • Grab an old container, yes, even that broken basin you’ve been “saving.”
  • Add soil (bonus points if you mix in compost from kitchen scraps like tomato peels or ugali leftovers).
  • Pick your fighter: sukuma, spinach, or terere. Plant, water, and let the sun handle the rest.

How to keep them alive:
Water regularly, give them light, and pull out weeds before they start plotting against your sukuma.

What you’ll need:

  • 1 bunch fresh sukuma wiki 
  • 2 medium tomatoes, chopped
  • 1 onion, sliced
  • 2 tbsp of Rina Vegetable Cooking oil
  • Salt to taste

How to prepare:

  1. Wash the sukuma, remove tough stalks, and slice into thin strips.
  2. Heat oil in a pan, fry onions until golden.
  3. Add tomatoes and cook until soft.
  4. Toss in the sukuma, stir well, add salt, and cook for about 5 minutes.
  5. Serve hot with ugali, rice, or chapati.
