Spicy Garlic Veggie Noodles

I’m sure most of us can relate this:

Your boss is keen on locking this deal so the pressure is off the roof. As a result, you’re in the office till ungodly hours but high key hoped you would get home early, catch that series that everyone has been raving about, with a delicious meal at bay. So much for FOMO!

12.42 AM – you hit send! All you can think about is bed! So you quickly dash to Chicken Inn for an unhealthy midnight delight. An already unhealthy start to the “clean” week you had planned. Sigh…

Well, guess what? We are here to make your life easier, healthier and tastier. Say NO to unhealthy with this quick recipe! All you need is 15 minutes for a perfect mix of delicious and healthy!

Ingredients

¼ cup low sodium soy sauce

1 tablespoon honey

1 teaspoon rice vinegar

½ teaspoon Rinsun sunflower oil

pinch of black pepper

3 dried chilies (choose whichever color)

2 – 3 packets of Numi Chicken flavored noodles

2 cups shredded spinach/cabbage

2 carrots

1 whole bell pepper, stem and seeds discarded and thinly sliced (you can have a mix of different colors)

4-5 mushrooms, sliced (baby bella, shiitake, button, etc.)

2 cloves garlic, minced

3–4 green onions, chopped into 2-inch pieces

Instructions

  1. To Prepare Noodles:

Place the noodles into a pot of boiling water and cook just until broken up. DO NOT cook the noodles fully at this point or they will not hold up in the stir-fry. Drain and rinse with cold water to stop the cooking process.

  1. To Make Sauce:

In a small bowl combine tamari/soy sauce, honey, sunflower oil, chilies and pepper. Stir and set aside. (If you add extra veggies/noodles or like it really saucy, I recommend doubling the sauce!)

  1. For Stir-Fry:

Place a large frying on the stove over medium-high heat. Add 1 tablespoon of cooking oil, along with the spinach, carrots, bell pepper and garlic. Sauté vegetables for 2-3 minutes until slightly tender. Add green onions and sauté for 1 more minute.

Add drained noodles and quickly stir-fry on high heat for 1-2 minutes, stirring constantly, until sauce thickens and evenly coats the noodles, adding the remaining sauce as needed. Serve immediately.
